Pink Bourbon Decaf | Colombia

Pink Bourbon is a variety as striking in the cup as it is on the tree, known for its soft pink hue and a profile of complex fruits and white florals, often likened to Geisha.

This lot brings together coffees from Rafael Aya, Luz Divia Fierro and Gabriel Castaño — widely regarded as the godfather of Pink Bourbon, who first discovered the variety on his farm, La Granada, in Huila and helped share it across the region.

This marks our second time showcasing this unique decaf lot — a reminder that decaf should never be an afterthought. With advancements in processing, decaf is on an exciting trajectory, and this coffee is a clear expression of that progress.

Using a natural ethyl acetate (EA) process, derived from sugarcane, caffeine is gently removed without stripping away the coffee’s character — allowing its florals, structure and sweetness to shine through.
